Thai Chicken Satay

One of our customers' all time favourite starters! This dish is loved by all ages, making it the perfect choice for sharing with family and friends. Fragrant, flavourful, and fun to eat. A must try!
Ingredients:

Chicken breast - 500 g

Coconut milk - 125 ml for grilling

Ground turmeric - 1 ½ teaspoons

Curry powder - ½ teaspoon

Coriander seeds (toasted) - 1 tablespoon

Ground cumin - 1 ½ teaspoons

Black pepper - 1/ teaspoon

Galangal (sliced) - 1 tablespoon

Lemongrass (sliced) - 1 tablespoon

Palm sugar 40 g
Instructions

Marinate the chicken: Thinly slice the chicken breast. Pound together the galangal, lemongrass, black pepper, and toasted coriander seeds into a paste. Mix this paste with the rest of the ingredients (coconut milk, turmeric, curry powder, cumin, and palm sugar). Add the sliced chicken and marinate for at least 3 hours in the refrigerator.

Prepare skewers: While the chicken is marinating, soak the wooden skewers in water to prevent them from burning during grilling.

Grill the chicken: Thread the marinated chicken onto the soaked skewers. Grill the sewers on a pan, grill, or in the oven using the broil function. While grilling, brush the chicken with the additional coconut milk occasionally to keep the chicken moist, aromatic, and rich.
To serve:
Serve the chicken satay hot, alongside with our Thai peanut sauce and a small side of cucumber relish. This dish makes a perfect appetizer or party snack, or can be enjoyed as a main dish with steamed jasmine rice or white breads.
